Ingredients

  • 2 pieces Chicken Thighs, on-bone, skin on
  • 1/4 cup Frolic® Sweet Chili Sauce
  • 1/2 tbsp fish sauce/soy sauce
  • 2 cloves garlic, chopped
  • 1/2 tbsp ginger, chopped
  • 1tbsp lime juice
  • 3 no. Red Chilies, sliced
  • 3 tbsp Butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Cilantro for garnish
  • Roughly crushed peanuts for garnish

Preparation

  1. Pre heat the oven at 180oC. Wash and par boil the beans in a pot separately.  Remove and marinade the beans with Zaika™ Chili BBQ Marinade.
  2. In a baking tray1 mix the onions, carrots, garlic, cumin seeds, Zaika™ Red Pepper Powder | Mild with little oil and bake until lightly roasted.
  3. Meanwhile, on a second baking tray2 rub the yam with salt, pepper and oil.
  4. Once all is ready, add in the tomato purée, marinated beans, rosemary and little water on to the baking tray1. Place both the baking trays in the oven until cooked through.
  5. Tear the stale bread and toss with the beans in the tray, add the yam and cheddar cheese (if using). Bake until a thick consistency is acquired. Remove and serve hot.
