Ingredients

  • 1 Onions, diced
  • 4 cloves Garlic, Sliced
  • 1 Carrots, diced
  • 1 Tbsp Zaika™ Red Pepper Powder | Mild
  • 1 tsp Cumin Seeds
  • 1/2 medium Yam, peeled and diced
  • 6-7 Tomatoes, purée
  • 150 gms Black Eyed Beans / Kidney Bean / Ewa Agoyin (or mixed)
  • 50gm Zaika™ BBQ Chili Marinade, mix with 50gm oil and 50gm water to make a paste
  • 4 springs Rosemary
  • 1/4 loaf Stale Bread
  • 1tsp Salt
  • 1tsp Zaika™ Black Pepper
  • Oil for cooking (olive oil / palm oil, according to preference)
  • 20gm Cheddar Cheese (optional)

Preparation

  1. Pre-heat the oven at 230oC.
  2. Pat dry the chicken thighs, rub it with salt & pepper. Heat a skillet, add 2 tbsp butter and pan-sear the chicken until golden brown.
  3. For sauce, add the remaining butter in the skillet, add garlic, ginger, red chilies until lightly golden.
  4. Add Frolic® Sweet Chili Sauce, fish sauce, lime juice and heat.
  5. Brush the chicken with the sauce and place it in the oven until cooked through, internal temperature of 72oC.
  6. Once, chicken is cooked glazed it in the pan with the sauce and garnish with peanuts and cilantro. Serve hot.
